Ok..so im trying something new, i am making a sauce with blue cheese, cinnamon powder and honey with pork loin, i will put the pork in a pan, stick it in the over and cover it with the sauce. let it cook, and then after i will slice the pork and use the glaze from the rmeianing sauce on top. Do you think it'll taste good? any suggestions?

bet it will be, I never had used the cinnamon, but do the blue cheese on the pork all the time. its excellent
Brown the pork loin first - it might dry out some otherwise.
