There is this video on YouTube that I was looking at and I noticed amazing video quality on a vx2100, and I love the widescreen on this video. If someone knows how to do this please tell me, I would love to record the videos exactly like this kid did. Thanks

No. The Sony DCR-VX2100 is standard definition video only. Standard definition video is 480 horizontal lines but can be either 4:3 or 16:9 (widescreen) aspect ratio.

The quality of the image is expected when large lens diameter (58mm) and large imaging chip system (3CCD; 1/3") and low compression (DV format to digital tape) is used and imported over firewire. Add a fish-eye lens.
Exporting/rendering from the video editor to 720p or even 1080i/p is easy enough to do, but this will just cause a larger than needed video file. There is no "improvement" in video quality if the source was standard definition video.
