I am doing a writing assignment but I don't know if a sentence can stand alone by just saying: My Parents.
Technically, no. A complete sentence requires a subject (noun) and a verb. Your example contains only a subject.
However, the verb can be implied and is often left out. For instance:
"Who paid for your new car?"
"My parents (did)."
The word 'did' is implied. You should be fine using 'my parents' in your assignment unless it's a formal assignment.
