i need a quick recipe for caramel popcorn where it doesnt have to sit in the oven for an hour...i just wanna make the caramel in a pan on the stove and be able to pour it over the popcorn
Mix all ingredients together. Cook till softball stage. Remove from heat, add 1 tsp. b. powder. stir up, and pour over popcorn.
It's the best recipe I've EVER tried!!! Makes it soooo yummy, soft, and not too sticky, and it never turns out sugary or anything. It's also really good if you put chopped walnuts or pecans in it. mmm
Measure 6 cups popped popcorn and combine in a large bowl with 1 cup chopped peanuts and 1/2 teaspoon salt. Set aside.
Caramel:
1/2 cup molasses
1/2 cup light corn syrup
1/2 teaspoon vinegar
Combine in a deep pan. Bring slowly to a boil and continue cooking over low heat until a small amount of syrup forms a hard ball when dropped into cold water. Remove from heat and stir in 1 tablespoon butter. Pour syrup over popcorn mixture, stirring well to coat.
Transfer mixture to a greased loaf pan and cut into squares while still warm.
Heat 2 cups of sugar with 1 stick of real butter till it is liquid. Simmer until it is thick as caramel, then pour over your popcorn and stir to mix it in.

Many times I don't put in the oven - Its just soft and sticky, but I like that way.
