I have an amazing chicken carbonara dish that I want to make, but don't know what a good side dish would be with it. I made a carbonara once before with homemade bread sticks, but that was just WAY too many carbohydrates for one dish. Does anyone have a good side dish that could go well with a chicken carbonara dish, that is besides the obvious side salad or caesar salad?? Thank you!
Update:I put it over pasta... thats what chicken carbonara is. I just wanted something else to serve besides a high fat and carb (but delicious) meal

Since you're opting to serve a high fat/carb main dish, I wouldn't worry so much about the fat content of your side dish.....however, I would be cautious about serving more than one incredibly rich dish at a time. For your chicken carbonara, I might consider a simple chopped salad with fresh pears, candied walnuts, gorgonzola cheese, and Champagne Vinagrette. If you really want another "side" to this meal, then you might consider a stir-fried Italian vege medley, such as red and yellow bell pepper rings, zuchinni, yellow squash, with lots of fresh ground black pepper, italian herbs, olive oil and a sprinkling of parmesan.
This is my Favorite Recipe for plain chicken. Hawaiian Chicken Kabobs: 3 tablespoons soy sauce 3 tablespoons brown sugar 2 tablespoons sherry 1 tablespoon sesame oil 1/4 teaspoon ground ginger 1/4 teaspoon garlic powder 8 skinless, boneless chicken breast halves - cut into 2 inch pieces 1 (20 ounce) can pineapple chunks, drained skewers In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours. Preheat grill to medium-high heat. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.
I'm not sure why you think a side salad is an appropriate side for Carbonara, but traditionally it is served over pasta. This negates the need for a side dish as the side is incorporated into the meal.
FRESH Sauteed Green Beans. Use the recipe below, or you can search for another recipe on the same site. I might add some slivered almonds to the dish as well... a really special touch!
