If I drink a lot of coffee first thing in the morning before a work-out, I get excited, giddy, and overly happy.
If I work out an hour, and then drink a lot of coffee, I get paranoid, depressed, and I end up in a bad mood.
What causes this?
How do I fix this?

You're simply drinking too much coffee and taking on too much caffeine. Caffeine before a workout can help your workout, but there is no need for any after it. Try a protein shake instead!
