Curry Salmon has become my favorite. I found the recipe on Foodnetwork.com and now almost everytime I make salmon I cook it that way. Asparagus, brussel sprouts or some rice with onions and peppers work really well for side dishes.
I'm the major cook in our family...I cook four out of seven days per week, most weeks, but my (Japanese) wife does most of the seafood dishes.
One 'western' thing she does is to top salmon steaks with thinly-sliced avocados, small steamed shrimp/prawns, a mixture of real mayonnaise and sour cream (equal parts) and some freshly-ground black pepper. She repeats the layers at least once, and covers the whole thing with grated cheddar cheese.
She 'builds' these things on a double layer of aluminum foil, wraps them into a sort-of pouch, with some head-room and pops them into the oven for a while...Side dish is merely a mixed green salad and fresh baguette or oven-toasted garlic bread with parsley. She'll usually serve a hot or cold potato and leek soup (made by me) with this dish. Steamed veges such as baby carrots or asparagus spears with vinaigrette dressing, served warm are also nice on the side...

Maybe a caramelized onions and roasted potato wedges or Greek-style oven fries.
Or stuffed bell peppers / tomatoes and rice pilaf.
Perhaps couscous and baked glazed carrots.
I made an acorn squash and salmon chowder that was so good we couldn't stop eating it.
