Birria- Boil 1 chile Ancho and 5 or how many you like chile de arbol, boil together until soft about 15 minutes. Meanwhile put about 2-3 pounds of pork in a large pot. It can be any cut but make sure it has some fat and cut up the meat in large chunks.Blend- Blend the cooked chiles(remove seeds of chile ancho only) half an onion, 2-3 cloves of garlic, salt as much or less as you like , 3 tablespoons of cumin seeds, a bunch of cilantro(not the same as parsley) 1 1/2 tablespoons of oregano, one tomato, 3-6 tomatillos dependindg on the size. Blend until smooth and transfer over to meat. Simmer for 2-3 hours or until very tender and delicious. You can eat it in tacos with onion and cilantro, or like a beef stew with tortillas. CHEESY MEXICAN CHICKEN 4 skinless, boneless chicken breasts or thighs 1 16 oz jar chunky salsa 4 slices Swiss cheese 4 slices tomato 1 tbs. butter Brown chicken in butter using a skillet. Once browned cover chicken with salsa. Cover and simmer until chicken is done. When done,top chicken with a slice of cheese (or 2) and a slice of tomatoe. Replace cover remove from heat and let the cheese melt and tomato warm, about 10 minutes. Serves four. White rice is very good with this.

bit of roasted garlic from a jar
Optional Cheddar Cheese grated on top
Mix together, eat with a spoon.
Or put in a taco shell
OR roll up inside a tortilla and make enchiladas out of it.
