Hey, I'm a new lacto-ovo vegetarian (have been for nearly 2 months).
I've found a ton of recipes online, just wondering if anybody had any favorite recipes to recommend?
(I'm a teenager, but I love to cook!)

Congratulations on becoming vegetarian! I am a teenager as well and have been vegetarian for over a year and I love it, despite being the only one in my family. I am also gluten free, so I understand it can be tough sometimes to follow multiple diets. This is my favorite recipe as a vetegarian because it is great for getting the protein that vegetarians lack. I believe you can easily use vegan cheese and egg replacer (I don't know what you use but I have use Energ egg replacer with soy or rice milk and it always works great. The egg in this recipe is used to bind the rice together, so if you want to experiment on other options, feel free!) It is a pizza recipe so it is very customizable. Enjoy!
Brown rice/Black bean pizza:
Crust:
3 cups cooked brown rice
1 cup shredded mozzarella cheese
1/2 cup sesame seeds
2 eggs beaten
Let rice cool them combine all ingredients. Bake at 400 F for 20 minutes in a 14" round pizza pan. Let cool.
Black Bean Sauce:
1 15oz can black beans, drained and rinsed
2 Tablespoons olive oil
2 Tablespoons chopped fresh cilantro
1 teaspoon cumin
1-3 teaspoons hot pepper sauce to taste
1/2 teaspoon minced garlic
Combine beans, oil, cilantro, cumin, pepper sauce, and garlic in a food processor or blender until smooth. Spread mix over rice crust.
Toppings:
1/2-1 cup shredded cheddar cheese.
1/2-1 cup shredded monterrey jack cheese. (Feel free to use your favorite kinds)
Your favorite vegetables, chopped or sliced. (Tofu also tastes great)
Sprinkle 1/4 of the cheese over sauce. Design veggies on top then add the remaining cheese. Bake at 425 F for 12 minutes until cheese is bubbly. If you like, serve with salsa.
First of all, congratulations on your decision to go vegetarian! I have been a vegetarian for over four years and I can tell you that I feel much healthier, and it's great to know that nothing died for your meal!
Now, I just made this recipe a few days ago and it was absolutely delicious! It's called 'Spinach and Kale Turnovers'. This recipe turned out great. You just cook the filling, make the dough and flatten it out (don't cook it yet), put the filling on it, fold the dough over wrapping the filling inside, and then bake it until the dough becomes golden brown on the outside. My family and I really liked it. Good luck!
