My Grandmother is having trust issues with her family. She recently put me in charge of her funeral arrangements. My mom suggested that I become her Power of Attorney to ensure that no outside family members interfere with her financial or estate plans. Then I was told that a Power of Attorney loses say once the person has passed away so it would be better to become her Guarantor so I will be able to carry out her financial and estate plans once she passes without any outside interference from family members. I am not familiar with Power of Attorney or Guarantor. Which would be better once she passes on?

Power of Attorney is basically saying that you can make decisions for her or in her place if she becomes unable to do so, due to illness or incompetence, etc... So, once she passes away, she has no decisions to make, therefore you would not either. Guarantor basically "guarantees" that the deceased's wishes are carried out. So, I would choose becoming the latter of the two. Good luck.
