I've killed some giants, and after waiting for at least 400 hours game time, fast travelling, finishing The dark brotherhood questline and almost finishing the thieves guild one - as well as just exploring areas in general, the giants never ever respawn. Apparently they do but the times I've heard vary - some people claim 30 days; others, 2 weeks. Is the game glitched or do I just have to keep waiting... thanks.
Update:@lola so are you saying that there'll never be any more giants for me to kill then? :|

Enemies DO respawn in Skyrim. It takes around 30 days of game time. Lola is incorrect, places such as caves that may be "cleared" WILL respawn enemies within the (interior) of the map.
(tested myself at Embershard mine)
I am not positive if enemies respawn in the surrounding area outside of it.
I also believe any non essential NPC's (such as shopkeepers) will respawn as well.

They don't respawn exactly. Just travel the world and you will find them. Respawning is implying that the same thing is coming back.
When you've reached a place and killed everything there, they cant come back cause you've already been their and done that. The only thing that I think that can respawn is dragons.
