Heat wok or large frying pan and add 1 tbs oil. Add 1 clove of crushed garlic, a small piece of grated ginger and chicken bite size pieces. You can use chicken breast or thigh fillets. Stirfry for 2 minutes or until chicken has changed in colour.
Add sliced shallots (spring onions) and 1 bunch of asparagus chopped into short pieces.
Stir in 2 tbs of soy and 1 tbs of seet chili sauce and about 1/4 cup of water. Stirfry for a few more minutes.
Mix a little mayo and mustard in a dish. Steam 10 asparagus spears. Take deli ham, spread the mayo/mustard mixture on it. Add a slice of swiss cheese and 2-3 pieces of asparagus, depending on the size. Roll up. Place in the middle of the chicken and wrap the flattened chicken around it.
Heat olive oil over medium high heat. Add teh chicken and cook through. Take out the chicken and cover in tin foil.
In pan, place a cup of mushrooms and 2 cloves of garlic. Cook 2 minutes. Add 1/2 cup of sherry and cook 3 min on high. Add 1/\2 cup of cream (I use fat free) and 2 slices of swiss and 1/4 cup of parmessian cheese. Cook 2-3 minutes until thick. Salt & pepper to taste.
Pour sauce over chicken. Serve with extra asparagus or over a bed of steamed spinach.
