The duties assigned to each position at the restaurant i work at are completely random, unfair, and stupid. I won't go into details. My manager is clueless and needs some help, but i want to make sure i am not the crazy one before offering my own help.
Here are the positions:
Cook
Delivery Driver
Server
Bartender
Salad Person
Please note: Salad Person only works 2 nights of the week and Bartender is clueless and works only on the weekend. Please keep this in mind when assigning duties.
Duties:
Greet, seat, and wait on tables. Server
Sell slices, take take-out orders, and work the cash register. Server
Bus the tables and re-set them with new rolled silverware. Server
Answer phones and input online orders. Server almost always, Driver sometimes
Prepare dine-in and to-go salads when salad person is not working. Server
Prepare delivery salads when salad person is not working. Driver Server, sometimes
Clean bathroom, sweep, and mop restaurant. Driver
Package desserts and stock soda machines. Server
Wait on the bar customers and make drinks for tables on weekdays. Server
Take out the trash. Driver (1 can) & Server (2 can)
Clean the dishes and bring clean ones to the front. Driver (1/2) & Server (1/2) (brings everything though)
Prepare the pizza and pastas. Cook
Clean and stock salad bar. Server & Driver (Mainly)
Clean the bar at the end of the night. Server
Prepare all food lines. Cook
Please tell me how they should be assigned. I am not working as any of these positions, therefore i don't know what is fair. I am supervisor and i know things must be changed. Keep in mind on any given night, 3 or 2 cooks, always 1 server, and 3 drivers....Tip jar goes to the Cooks

The list actually looks ok except that it should list by each position. In a restaurant, especially in a small one, there should always be someone that has backup and secondary duties to each job. You did forget that all of the kitchen staff has the duty of cleaning the kitchen, especially at night and the dining room staff to clean the dining room. The server can clear the bar area of drinks and clean any table areas there but the bartender should clean the bar and the bartender/server actually cleans the bar itself. z
Tips should be split between servers and cooks. I assume the driver keeps his/her own tips. The cooks should be doing everything food related (prep of salads, clean the dishes, prepare all food, clean kitchen). Maybe you should sit down with the staff and ask them what they think is fair. The best run companies receive input from their staff. Happy staff = happy workplace.
