I am making a 2lb pork loin roast tonight and just wanted to see some different recipes, what are your favorites? Cooking time and temp,my slow cooker has a thermometer just wondeing how many hours, to plan the sides?
I want to make it with potatoes, celery, carrots, onions..

It's not very big, but I would suggest covering with your veggies and potatoes, add some broth, stock, or boullion and season with Italian seasoning or your choice of spices including salt and pepper.
A pork loin doesn't have much fat on it so don't be afraid of adding some extra fat like bacon over the top or salt pork.
I would put the vegetables in the bottom of the cooker, then coat the loin with desired spices (Garlic powder, thyme, FENNEL, black pepper, etc) and place it on top of the vegetables. Add a bay leaf and some chicken or vegetable stock and cook on low for 8 to 10 hours.
cook on low for 8 hours...i would put onions and celery in right away, and the potatoes and carrots in 1/2 way through the cooking time...do you know what really goes well with pork ? apples...If you have apple cider or juice put about a cup in the crock pot...if not..cut up an apple or two and set on top of your roast..of course you should season your roast with salt and pepper...
Crock pots are not meant to be used dry. I wouldn't risk ruining either or both of the pot or the roast. I cook my pork loin in vegetable juice in the crock pot. Comes out great every time.
