What vegetarian entrees or meals do you think would be suitable on the menu at a barbeque restaurant? That may sound odd, because BBQ is usually all about meat. However, I'm convinced an acquaintance's BBQ restaurant, which is near a university, would draw more customers if they provided more sophisticated vegetarian options. Right now, you can get a baked potato, potato salad, coleslaw, or baked beans and some bread and that's it. When I brought this up, they said "Like what" and I kind of drew a blank but said I'd get back to them. Ideas anyone?

You could offer a vegan burger,such as Gardein's Beefless Burger or have the chef make them. You could offer a vegan chili. What about a vegetable stew with tempeh cubes?
Gardein also makes Beefless Tips that could be used in a sirloin tips-type recipe or on kabobs with vegetables. They also have Chick'n Scallopini "Breasts" that you can cook like chicken. And they have a sort of "pulled pork" product.
If your chef is particularly creative, s/he could make seitan and bread it and fry it. Seitan (also known as wheat meat) has a chewy texture and as long as your diners aren't sensitive to wheat, is a good substitute.
A few years ago,my boyfriend and I were in Pittsburgh for an event,and this BBQ-type place had the most amazing tofu and veggie kabobs. They also did what they called seitan wings (but were really cubes) that were pretty tasty.
One thing: Try to have a separate grill for the veggie stuff. We vegans are a bit sensitive about stuff like that.

I bet a portabello mushroom, those big meaty ones, would taste divine grilled over hot smokey coals and served with a spicy BBQ sauce.
Slabs of egg plant would also grill nicely.
They COULD offer alternative burgers grilled and seasoned with their signature BBQ sauce.
Salad, soup, deviled eggs, spear pickles, cookies, Jell-O, omelets, and yogurt are perfect barbeque companions! Hope these ideas work!
Real Falafel's with tahini sauce.
This recipe looks very interesting, and I plan on making it in the next week or two;
