Mitsuko Uchida, one of the finest musicians alive, pianist.
Aki Takahashi, piano, who specializes in contemporary classical music.
These two are certainly world-wide renowned Japanese Musicians.
Remember, too, that many members of the Tokyo Philharmonic are 'world class' musicians, even if their names are only known locally.

ADD: The internationally recognized and admired composer Toru Takemitsu (deceased).
Best regards.
Midori Goto, Mitsuko Uchida, Seiji Ozawa (conductor), Anne Akiko Meyers (Japanese-American). Megumi Kanda, trombonist, is decently well-known in the brass world.
Nobuya Sugawa.
Mitsuko Uchida. I saw her preform/conduct Mozart's Piano Concerto No. 21, and it was mesmorising...
I also got to meet her after the show. She autographed my program and CD.
The best known have already been mentioned, but I would like to add Tadaaki Otaka. He made a wonderful recording of 'Psyché' by César Franck, and fine recording of Elgar's 'Enigma Variations'. A first-rate conductor.
