I am looking for some guidance on how long canned preserves, jams, jellies, etc are good for. My mother has preserves ranging from 3-25 years old that were all homemade and home canned. While she is away on vacation and I am caring for her house I would like to get rid of the ones that might be harmful. At what point does the canning process start to fail?
