1-2 (11 oz.) cans whole segment mandarin oranges in lite syrup
1 (10 oz.) Minute Maid frozen "reduced acid" orange juice
1 to 1 1/2 c. almonds (whole, sliced or slivers)
1 pkg. Good Seasons Italian dressing mix
2 tbsp. low sugar orange marmalade
2 c. (16 oz.) water
Wafer thin slices purple onion
Thinly sliced green bell pepper
Thinly sliced red bell pepper
Wafer thin slices cucumber with peel
Mrs. Dash "Table Blend"
SALAD: Drain oranges, set aside syrup. Wash and dry spinach and lettuce. Cut up half of spinach and half of lettuce. Place whole leaves of spinach and whole leaves of lettuce in individual salad plates or bowls.
Add cut-up leaves. Garnish with cucumber, red and green bell peppers, onion and orange slices. Sprinkle with almonds. Chill until ready to serve.
Before serving, sprinkle with Mrs. Dash "Table Blend, " then add dressing.

Using a fork, place coated bananas in oil and fry for 2 to 4 minutes, or until golden brown. Remove from oil with tongs and drain on several layers of paper towels. well i made some real good chicken Parmesan last night. for the breading i used crushed garlic croutons (gives better taste then dryed bread crumbs). it was real good. i marinated my chicken breast in Kraft Italian dressing for a good 30minutes, then i dipped the chicken in the croutons ( did not have to use eggs.) i fried them a bit to make them brown then i put them in the oven to finish cooking them. then i added the spaghetti sauce and mozzarella cheese... it was really really good!!!

1. Combine the water, yeast and 15ml/1tbsp of the sugar in a measuring jug and leave for 15 min. until frothy.
2. Pour the milk into a large bowl. Add the remaining sugar, the butter or margarine, and salt. Stir in the yeast mixture, then stir in the flour, 150g/5 oz/1 ¼ at a time, until a stiff dough is obtained.
3. transfer the dough to a floured surface . knead the dough until it is smooth and elastic, then place it in a large greased bowl, cover with a plastic bag, and leave to rise in a warm place until doubled in volume, about 2-3 hours.
4. grease two 23 x13 cm/9x 5in loaf tins. Punch down the dough and divide in half. Form into loaf shapes and place in the tins, seam-sides down. Cover and leave to rise again until almost doubled in volume, about 45 min. meanwhile, preheat the oven to 190°c/ 375°f/ gas 5.
5. bake until firm and brown, abut 45-50 min. turn out and tap the base of a loaf: if it sounds hollow the loaf is done. If necessary, return to the 0ven and bake for a few minutes longer. Turn out and cool on a wire rack.
Chewy chocolate biscuits
Preheat the oven to 180°c/ 350°f/ gas 4. line two baking sheets with greaseproof paper and grease. Using an electric mixer, beat 4 egg whites until frothy. Sift over 275g/10oz/ 2cups icing sugar and 5 ml/1tsp coffee. Add 15 ml?1tbsp water,beat on low speed to blend, then on high until thick. Fold in 115g/4oz/1cup chopped walnuts. Place generous spoonfuls of the mixture 2.5cm/1in apart on the sheets. Bake for 12-15 minutes. Transfer in a wire rack to cool.
MELTING MOMENTS
Makes 16-20 150 g/5oz/1 ½ cups self-rising flour
40g/1 ½ oz/3tbsp butter or margarine rolled oats, for coating
65g/21/2 oz/5tbsp lard 4 -5 glace cheriies, quartered, to decorate
75g/3oz/scant ½ cup caster sugar
½ egg,beaten
a few drops of vanilla or almond essence
Pre heat the oven to 180°C/350°F. Beat together the butter or margarine, lard and sugar, then gradually beat in the egg and vanilla or almond essence.
Stir the flour into th beaten mixture, with tloured hands, then roll into 16-20 small balls. Spread the rolled oats on a sheet of greasedproof paper and toss the ball in them to coat evenly.
Place th balls, spaced apart, on two baking sheets, place a piece of cherry on top of each and bake for about 15-20 minutes for 5 minutes before transferring to wire rack to coolcompletely.

MAKES 24
115g/4 oz/ ½ cup butter or margarine, at room temperature
45g/ 1 ¾ oz/scant ¼ cup coaster sugar
100g/ 3 ¾ oz/ generous ½ cup dark brown sugar
1 egg
2.5ml/ ½ tsp vanilla essence
175g/ 6oz/ 1 ½ cups plain flour
2.5 ml ½ tsp bicarbonate of soda
1.5ml/1/4 tsp salt
175 g/6 oz/ 1 cup chocolate chips 50g/ 2 oz / ½ cup walnuts, chopped
1. preheat the oven to 180°c/350°f/ gas 4. lightly grease two large baking sheets. With an electric mixer, cream the butter or margarine and both the sugars together until light and fluffy.
2. in another bowl, mix the egg and the vanilla essence, then gradually beat into the butter mixture. Sift over the flour, bicarbonate of soda and salt and stir. Add the chocolate chips and walnuts, and mix to combine well.
3. place heaped teaspoonfuls of the dough 5cm/2in apart on the baking sheets. Bake in the oven until lightly colored

MY FAVE TUNA CASSEROLE
3 cups cooked macaroni
1 (6 ounce) can tuna, drained
1 (10.75 ounce) can condensed cream of chicken soup
1(10.76ounce) can condensed cream of celery soup
1 cup shredded Cheddar cheese
1 1/2 cups French fried onions
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a 9x13-inch baking dish, combine the macaroni, tuna, and soups. Mix well, and then top with cheese.
Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly. Sprinkle with fried onions, and bake for another 5 minutes. Serve hot.

Orange Chicken.
Cook the chicken how you like it in orange sauce(?) and Orange Peels. It's quite deleicious!
