Much more important than size is the suitability to your region. Fruit tree varieties are VERY region specific. Many need to be planted in pairs for cross pollination and fruit production. If you are looking for an ornamental fruit tree and are not concerned with fruit then just look at your post. There are numerous links right there. If you want fruit then check with your County Agent for region specific variety recommendations, planting and care guides.
I wasn't able to find an reply quickly, however the search term you wish to have to use is "pear pollination chart". The dwarf trait is located in the rootstock of the tree and would not impact flower opening. You would take a branch from your extremely dwarf, graft it on a quince seedling, and get a full measurement bartlett pear tree. I'd by no means discourage someone from getting another fruit tree, but you would graft one department from a pollinator tree onto yours and get pollination, as well as a couple of fruits from the opposite type.
