Hello all-
I am looking for a good sheperds pie recipe. My husband is a very picky eater so the only vegetables it can have in it are green beans and corn. He will eat tomatos, potatos and beef but no cream of mushroom soup (we are both allergic). I have seen some recipes that look like I can modify them to fit our needs but wanted to see if anybody else out there had one to try! Thanks!

Hello, I am English and I can assure you this is a traditional dish which is a hearty winter warmer. Can I just say that shepherd's pie is made with minced lamb and cottage pie is made with minced beef, otherwise both dishes are basically the same.
Serves 6
1 tbsp olive oil
2 onions, finely chopped
2 garlic cloves, finely chopped
1lb 8oz good quality lamb mince
2 carrots, finely chopped
salt and pepper
1 tbsp plain flour
8 fl oz beef or chicken stock
4 floz red wine
worcestershire sauce (optional)
For The Mash
1lb 8 oz floury potatoes
2 oz butter
2 tbsp cream or milk
salt and pepper
1 Preheat the oven to 180/350 gas mark 4
2 Heat the oil in a large, flameproof casserole dish and fry the onion until softened, then add the garlic and stir well.
3 Raise the heat and add the meat. Cook quickly to brown the meat all over, stirring continually. Add the carrots and season well with salt and pepper.
4 Stir in the flour and add the stock and wine. Stir well and heat until simmering and thickened.
5 Cover the dish and cook in the oven for about 1 hour. Check the consistency from time to time and add a little more stoc kor wine if required. The meat mixture should be quite thick but not dry. Season with salt and pepper to taste and add a little worcestershire sauce, if required.
6 While the meat is cooking, make the mashed potato. Cook the potatoes in a large saucepan of boiling salted water for 15-20 mins. Drain well and mash until smooth. Add the butter and cream and season well with salt and pepper.
7 Spoon the lamb mixture into an ovenproof serving dish and spread or pipe the potato on top.
8 Increase the oven temp to 200/400/gas 6 and cook the pie for 15-20 mins at the top of the oven until golden brown. You might like to finish it off under a medium grill for a really crisp brown topping to the potato.
1 lb ground beef
1 onion (diced)
2 cloves garlic (minced)
2 medium potaotes (thinly sliced)
1 cup shredded cheddar cheese
1 14.5 oz can diced tomatos (UNDRAINED)
small can of corn
Brown ground beef with onions, salt, pepper, and garlic. Drain. Add diced tomatos, and corn and heat through. In a souflle pan layer 1/2 the meat mixture, then enough potato's to just cover the meat, and 1/2 of the cheese. Add another layer just the same as the first. Cover with foil and bake @ 350 for 25 minutes. Remove foil and bake an additional 10 minutes.
